On July 20, 2023, the second day of the "China Root-Seeking Journey" summer camp in Zhenjiang, Jiangsu, campers, under the guidance of their leaders and volunteers, visited the Chinese Vinegar Culture Museum and experienced the vinegar-making process.
First, the campers listened attentively to the guide as they learned about the origin and transmission of Chinese vinegar culture, gaining insights into the character of the Chinese nation through cultural stories. For example, the story of "eating vinegar" symbolizing jealousy and the use of Du Kang's wine-making process to make vinegar led to amazement centuries later.
Next, the campers, guided by professional craftsmen, experienced the process of turning the vinegar mash. Vinegar mash fermentation is the core process in the production of Zhenjiang vinegar. After the professional craftsman's explanation, the campers eagerly raised their hands to try it themselves.
After the vinegar mash experience, the students moved to the counter to taste aged vinegar that had been aged for over three years. Some students really liked the vinegar, while others wrinkled their brows, finding it quite sour. One student commented, "It's very sour at first with a subtle crab flavor, and after savoring it, there's a lingering sweetness."
Amid the tangy taste, the students then visited the Baihua Wine Cellar to experience the visual impact of the wine cellar and explored Hengshun Pickles, savoring the fragrant aroma of pickles.
The most interesting part was the fruit vinegar-making process. Under the guidance of the teachers, the students carefully mixed their own fruit vinegar, their faces beaming with smiles. One student from Spain received praise for his fruit vinegar, and he enthusiastically shared the mixing ratio with his peers, spreading the joy. What surprised the campers most was that the carbonated water provided for their mixtures contained vinegar.
Before visiting the Zhenjiang Vinegar Culture Museum, teachers from Jiangsu University prepared a question for each student, combining fun with education to deepen their learning awareness and knowledge. After the museum tour, the students easily answered the questions on their knowledge cards.
In summary, the visit to the Chinese Vinegar Culture Museum was filled with many rewards and lots of joy.
